Chocolate Angel Food Cake Phyllis Martino - 2007 Grand Champion
   
2 cups egg whites
2 cups sifted sugar
1 cup plus 2 tablespoons sifted cake flour
1/4 teaspoon salt
 
1/3 cup sifted cocoa
1 teaspoon vanilla
2 teaspoons cream of tartar

 
   
Sift together 1 cup sugar, flour, and cocoa four times.  Add cream of tartar, salt and vanilla. in a separate bowl, beat egg whites at medium speed until stiff peaks hold.  Gradually add 1 cup sugar to stiff beaten egg whites.  Using a wire whisk, gently fold in the sugar, flour and cocoa mixture 2 tablespoons at a time.  Pour batter into an ungreased angel food cake pan.  Place in a cold oven.  Turn the oven on 325 degrees for 1 hour and 15 minutes.  When cake is done place the inverted pan on a 2-liter soda bottle and leave until cake is completely cold.  Use a knife to remove edges from pan.  Serves 16.

German Chocolate Pie Deb Mills - 2007 Reserve Grand Champion
   
Filling:  
1 package semi-sweet Bakers Chocolate 3 eggs, beaten
1/4 cup stick butter 1/2 cup sugar
1-1/4 cups coconut 13 oz. evaporated milk
   
Melt chocolate and butter over low heat.  Add milk, coconut, eggs and sugar.  Stir until blended.  Pour into unbaked pie shell and bake.
   
Crust:  
3 cups flour 1 tablespoon vinegar
1/3 cup water 1 egg
1 teaspoon salt 1 cup + 1 tablespoon shortening
 
Combine flour and salt, cut in shortening.  Mix vinegar and water together and add to flour mixture.
